This 6000 bottle batch recipe used twenty two unpeated (5 years old) Ex-Bourbon casks that were re-racked in to Sauternes barriques for a further 2.5 years.

Nose: Apricot jam, almond flakes, marzipan, Brioche, dried stone fruit.

Palate: Seeded bread, green peppercorn sauce, apricot,

heather honey, more savoury than the nose.

Finish: Less sweet than the nose, wonderfully balanced with a dry finish.

This whisky is bottled at 50% ABV.

Like all our whiskies this Sauternes Cask Release is un-chill filtered and natural colour.
